Peri Peri Chicken Traybake Recipe

If you’re a Nando’s lover then your going to love this recipe, my Peri Peri Chicken Traybake, packed full of flavour its spicy its smokey and is so easy to make. Lets go:
Ingredients:
- 1kg skin on chicken thighs
- 2 corn on the cobs
- 3 mixed bell peppers
- 1 large red onion
- 4 garlic cloves
- 1 red chilli
- 1 tbsp peri peri seasoning
- 3 tbsp Nando’s hot peri peri sauce or marinade
- Handful fresh parsley (optional garnish)
- 1 lime cut into wedges (optional garnish)
Marinade:
- 1 tbsp Nando’s chicken marinade sauce
- 2 tbsp peri peri seasoning
- 1 tsp olive oil
Method:
- Add the chicken and the rest of the marinade ingredients to a bowl, mix together and marinade for 20 minutes or longer if you have time.
- Add the rest of the ingredients to the tray and then place the marinated chicken on top to season well then place in an oven at 180c for 40-45 minutes. Garnish and tuck in, enjoy.
