Ingredients


Marinade

  • 2–3 garlic cloves, minced

  • 1 tbsp mixed herbs (rosemary & thyme)

  • 1 tsp olive oil

  • Juice of 1 lemon

  • Salt & pepper

Tray

  • 1kg chicken thighs

  • 5 large potatoes, cut into wedges

  • 1 large onion, sliced

  • 4 garlic cloves, whole

  • 5 sprigs thyme

  • 1–2 tbsp fresh lemon juice

  • 1 tbsp mixed herbs (rosemary & thyme)

Garnish

  • 1 lemon, cut into wedges

  • Fresh thyme

Instructions


1. Marinate the chicken
Add the chicken thighs to a bowl with the garlic, mixed herbs, olive oil and lemon juice. Season well with salt and pepper and mix to coat evenly.

2. Prepare the tray
Add the potatoes, onion, garlic cloves, thyme and mixed herbs to a large roasting tray. Season well and toss together.

3. Assemble the traybake
Lay the marinated chicken thighs on top of the vegetables.

4. Roast
Cook at 180°C (fan) for 45 minutes until the chicken is fully cooked, the skin is golden and the potatoes are tender.

5. Finish and serve
Garnish with fresh lemon wedges and thyme before serving.
