Greek Lemon Chicken & Potato Traybake

This is a firm new favourite in my house—my quick and easy Greek Lemon Chicken & Potato Traybake. With such simple ingredients yet so flavourful, this recipe is so easy to make and will definitely become a family favourite in your house too. 


Ingredients: 

 Marinade:

2-3 garlic cloves, minced

1 tbsp mixed herbs (rosemary & thyme) 

1 tsp olive oil

Juice of 1 lemon

Tray: 

1 kg chicken thighs

5 large potatoes, cut into wedges

1 large onion, sliced

4 garlic cloves, whole

5 sprigs thyme

1-2 tbsp fresh lemon juice

1 tbsp mixed herbs (rosemary & thyme) 

Garnish:

1 lemon, cut into wedges

Fresh thyme


Method:

  • Add the chicken to a mixing bowl along with the marinade ingredients, season well with salt and pepper, then set aside.

  • Add the rest of the tray ingredients to the tray, mix together, lay the marinated chicken on top, then place in the oven at 180°C for 45 minutes until the chicken is fully cooked through.

  • Garnish with fresh lemon and thyme and tuck in!
