Greek Lemon Chicken & Potato Traybake

This is a firm new favourite in my house—my quick and easy Greek Lemon Chicken & Potato Traybake. With such simple ingredients yet so flavourful, this recipe is so easy to make and will definitely become a family favourite in your house too.
Ingredients:
Marinade:
2-3 garlic cloves, minced
1 tbsp mixed herbs (rosemary & thyme)
1 tsp olive oil
Juice of 1 lemon
Tray:
1 kg chicken thighs
5 large potatoes, cut into wedges
1 large onion, sliced
4 garlic cloves, whole
5 sprigs thyme
1-2 tbsp fresh lemon juice
1 tbsp mixed herbs (rosemary & thyme)
Garnish:
1 lemon, cut into wedges
Fresh thyme
Method:

Add the chicken to a mixing bowl along with the marinade ingredients, season well with salt and pepper, then set aside.

Add the rest of the tray ingredients to the tray, mix together, lay the marinated chicken on top, then place in the oven at 180°C for 45 minutes until the chicken is fully cooked through.

Garnish with fresh lemon and thyme and tuck in!
