Greek Lemon Chicken and Orzo One Pot Recipe

Get a taste of the Mediterranean with my Greek Lemon Chicken and Orzo One Pot, a perfect healthy high protein midweek meal. So easy to put together, lets go: 

 

Ingredients

  • 1kg skin on chicken thighs 
  • 800ml chicken stock 
  • 1 courgette diced
  • 1/2 yellow pepper diced 
  • 1 large onion diced 
  • 1 tbsp minced garlic 
  • 1 mixed herbs 

 

Marinade: 

  • 1 tbsp minced garlic 
  • 1 tbsp olive oil 
  • 1 tbsp mixed herbs 
  • Juice of 1 lemon and zest 
  • 300g dry orzo 
  • Garnish: (Optional) 
  • 1-2 tbsp crumbled feta 
  • Half lemon sliced 
  • Handful fresh parsley 

 

Method:

  • To a bowl add all the marinade ingredients and marinade for a minimum of 30 mins, the longer the better. 
  • Once marinaded, add the chicken to a pan and cook off until the skin is crispy on the outside and juices run clear (8-10 minutes on low-medium heat) then remove from the pan. 
  • Add the onions and garlic to the pan and cook until softened then add the courgette, pepper and 1 tbsp mixed herbs, a dash of water, season well and cook for a further 5 minutes until the vegetables have softened. 
  • Add the dry orzo to the pan then slowly begin to add the stock ladle by ladle, once the stock covers the orzo place the chicken back into the pan and put the heat to low. 
  • Let the stock absorb into the orzo and cook for 8-10 minutes, once the orzo is al dente and cooked through garnish with crumbled feta, parsley and fresh lemon. Tuck in and enjoy.
